Gingerbread and winter seem to go together perfectly. And this super simple and tasty cake also goes well with your weekly meal plan!  I suggest serving it with a dollop of whipping cream.

Easy Gingerbread Cake Spiced with Ginger and Cinnamon

Easy Gingerbread Cake

Serves 8

1/2 cup butter
1/2 cup brown sugar
1 egg
1/2 cup cooking molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon cinnamon
1 cup hot water

Whipping cream (optional)

Directions: 


Preheat oven to 350° F.

In a medium-sized bowl, cream together butter, brown sugar and egg until creamy. Beat in molasses.

In a separate bowl, combine flour, baking powder, baking soda, salt, ginger, and cinnamon.

Stir dry ingredients into the butter mixture and slowly beat in the hot water. 

Spoon into an 8-inch square pan lined with parchment paper. Bake for 25 to 30 minutes until cooked. Serve with a dollop of whipping cream.
