Sweet potatoes are easily available for us during the fall and winter season. Whenever sweet potatoes shows their heads in my local farmer market i dont forget to get them as i love to bake some delicious bakes out of them. Not to forget that sweet potato are just  fabulous to make our Indian style curries as well. Sweet potatoes makes some delicious, super moist cakes, do you know that, if not dont forget to check my Potato Chocolate Cake which is completely eggless, as mashed sweet potato replace very well eggs. Obviously you can make even some delicious vegan cakes and bakes out of the them. Hence i tried my hands to bake this dangerously addictive and super soft muffins with both sweet potatoes and chocolate chips. Dont forget to bake this extremely soft muffins if you get sweet potatoes abundantly in your place. These muffins are extremely delicious, to serve either for breakfast or as dessert after a meal with a scoop of ice cream or simply for an evening snacks.

Chocolate Sweet potato Muffins

These eggless muffins are super easy to put all the ingredients and bake in an ease. Trust me these muffins are really good, easy to pack in anyone’s snack box. Definitely a filling and satisfying breakfast kind of muffins to kick start of the day especially if you have an hectic day in front of you. Made with basic ingredients, these delicious muffins are dangerously addictive as these muffins are loaded with chocolate chips. Obviously kids will go crazy if you serve this muffins for their snacks, and trust me these muffins smells too good as this muffins calls for both cinnamon powder and nutmeg powder. Am running this week’s blogging marathon with Seasonal fruits and vegetables and sweet potato is a seasonal tuber here, obviously these muffins suits absolutely incredible for the theme.

Sweet potato, Chocolate Chips Muffins

2cups All purpose flour

1tsp Baking powder

1/2tsp Baking soda

1/2tsp Cinnamon powder
1/4tsp Nutmeg powder

1/4tsp Salt
1/2cup Chocolate chipps

Wet ingredients:

1/2cup Mashed sweet potato

1tsp Vanilla extract

1cup Sugar

1/2cup Oil

1/2cup Yogurt

Preheat the oven to 350F, grease the muffins moulds generously, keep aside.

Combine the dry ingredients together except the chocolate powder, sieve twice and keep aside.

Mix well the wet ingredients together in a bowl.

Chocolate Chips  Sweet potato  Muffins

Make a well in the centre of the dry ingtedients, gradually add in the wet ingredients, mix gently with a spatula. Fold in the chocolate chips.

Pour this batter to a already prepared muffin tray and bake for 25-30minutes.

Allow to cool in a wire rack.

Remove the muffins from the mould.
