
Am running this week’s blogging marathon with Breakfast staple with different grain as theme. After two different breakfast dishes, here comes one of the easiest breakfast dish which i quickly whisked with cornmeal. Cornmeal works prefect for dishing out some delicious uthappams. With simple preparation and usual cooking process, one can finish their breakfast with less efforts. Though you can add varieties of vegetables for toppings, i opted for carrot, capsicum and tomatoes. How colourful its looks na. We had these thick pancakes with sambar for our breakfast. If you want a satisfying, quite filling breakfast, dont forget to give a try to this dish.

1cup Cornmeal
1/2cup Curd
1cup Mixed vegetables (grated carrot, chopped tomatoes, chopped capsicum)
Salt
Water as per need
Take the cornmeal in a bowl, add the curd, salt and mix well, keep aside for 15minutes.
Now add enough water to the prepared batter to turn the batter as pouring consistency.
Heat a non stick tawa or griddle on medium flame.

Apply oil, once the tawa is hot, pour a ladle of the batter and spread it as a circle.
Drizzle some oil and sprinkle enough vegetables on the top.
Give a press with a spatule and cook in medium flame with lid closed.
Once the batter gets cooked, flip the uthappam and cook well.
Remove from the pan and serve with chutney or sambar.
