Serves 4

2 cups butternut squash peeled, seeded, and cut into 1/2 inch cubes
2 cups beets, peeled and cut into 1/2 inch cubes
2 tablespoons olive oil, divided
Salt and pepper

1 small shallot (about 2 tablespoons), diced
1/2 cup farro pearled, rinsed
